Quinoa (pronounced keen-wah) is a grain. Not just any grain though, quinoa has protein in it. That makes it much better for you nutritionally than plain rice or noodles or bread.
Like rice, quinoa has no flavor. I have seen people that are new to eating healthy and they cook quinoa and eat it plain and exclaim “bah! This tastes bad!” That’s because like rice, you have to add the flavor yourself. And like rice, you usually combine it with other foods.
Here is how I buy quinoa and how I cook it:
I get one box of organic quinoa, and one box of vegetable broth. I empty both boxes completely into one pot and simmer/boil. In the end, you have enough quinoa to last for a weeks worth of meals or more.

I put a layer of quinoa down on a plate or bowl.
Add black beans.
Add chopped onion, dill relish, and mustard.
That’s it. It looks like a mess…..and tastes like a burger 🙂
Another recent recipe is “Mexican Bake.”
In a large pan I put down a layer of quinoa, followed by black beans, cumin spice, chopped red pepper, chopped onion, cilantro, and cheese. Bake until warm. Serve with salsa and Greek yogurt.
